nsomnia Cookies, a popular US bakery chain headquartered in New York and Philadelphia, is preparing to extend its presence into Nottingham. The bakery has set its sights on 16 Angel Row, a Grade II listed building in Nottingham city centre, originally constructed around 1800 as a townhouse before transitioning to commercial use.
Plans for the Nottingham store include significant renovations to the historic building. Insomnia Cookies aims to create a welcoming customer space, installing new fascia boards and signage on the exterior. Inside, they will replace existing finishes with fire-resistant materials and make updates such as new customer seating and kitchen facilities for baking their signature cookies.
The building, which has been vacant since its last occupant, Game, relocated in 2018, will be transformed into Insomnia Cookies’ latest venture. The bakery has applied for a licence to operate from 10 am to 5 am, seven days a week, offering customers warm cookies, cakes, and beverages.
With over 260 locations, mainly across the US and Canada, Insomnia Cookies is best known for delivering freshly baked cookies to doorsteps. The Nottingham store will be its fourth UK location, following three outlets in Manchester, with another set to open in Sheffield.
This expansion is part of Insomnia Cookies’ continued growth, bringing its late-night cookie delivery service to more corners of the UK.
